Friday Fill-Ins (August 3)

Every Friday, I’ll be participating in Friday Fill-Ins.

1. Well, ok, maybe eating those cookies wasn’t a good idea.
2. I have 50 elastic waistbands.  That’s a stretch! **rimshot**
3. When I’m making a phone call, I get nervous and anxious for no reason. Telephone-phobia?
4. I know I should be eating a bit healthier.
5. And frankly, it’s so hard to eat that way. Anyone want to help?
6. Money is the root of all evil. But money^2 is all evil. So that must be worse.
7. And as for the weekend, tonight I’m looking forward to watching more Olympics, tomorrow my plans include finding an electronic repair place, and Sunday, I want to watch the Pride Parade (remember this?)!

Slow Cooker Lasagna

Recently, I made slow cooker lasagna, and even bf the chef liked it! My sister S7 tried it as well and had to go out and buy a slow cooker for herself too.  This recipe can adjusted to your liking: add spinach, don’t use mushrooms, use ground turkey, etc.
**unfortunately, I neglected to take a picture until all we had left were leftovers**

Meat layer:
1lb ground beef, browned and drained
796 ml crushed tomatoes
156 ml tomato paste
fresh mushrooms, sliced (i used around 7)
spices (i used black pepper, roasted garlic and pepper, italian seasoning)

lasagna noodles, uncooked

Cheese layer:
500 ml cottage cheese (or ricotta cheese)
2-3tbsp parmesan cheese
handful shredded mozzarella

Brown the ground beef, saute the mushrooms, and mix in the tomatoes and tomato paste.  Simmer on low for 10 minutes.

Combine cottage cheese, parmesan, and mozzarella in a separate bowl.

In the slow cooker, start with a layer of 1/4 of  meat sauce. Then break the noodles so they fit in the bowl for the next layer.  Spread 1/3 the cheese mixture on top of the noodles. Repeat this 3 times, and top with a final layer of meat sauce.

Cook on low for 4-5 hours.
In the last 30 minutes, sprinkle a layer of shredded lasagna.

Note: I used a 2 quart slow cooker, and could only use half of the meat mixture. I saved the other half for pasta sauce for later.

Friday Fill-Ins (July 20)

Every Friday, I’ll be participating in Friday Fill-Ins.

1. Staying active is what I’m trying to do.
2. I wish I could dance well, that would be nice!
3. The very thought eating peanut butter makes me gag.
4. I think my mirror image is so beautiful but not what I see in pictures. Is this reverse body dysmorphic disorder?
5. I grew up in Langley and Chilliwack.
6. My most recent meal was my most memorable meal, only because it was most recent.
7. And as for the weekend, tonight I’m looking forward to hanging with S7, tomorrow my plans include working (urgh… Saturdays) and Sunday, I want to go read at Belcarra (if it’s sunny)!

Friday Fill-Ins (July 13)

1. For the first time since I moved out of my parents’ house I can bake. I finally have a proper oven!
2. Going to the night market is one of my best memories of the summer so far.

6. Vanilla is a fragrance I enjoy most in a candle.
7. And as for the weekend, tonight I’m looking forward to partying it up with @littlespace, tomorrow my plans include going for another walk and Sunday, I want to just chill!

Friday Fill-Ins (July 6)

Every Friday, I’ll be participating in Friday Fill-Ins.

1. I am happy that the sun is finally here!
2. Watermelon and zucchini are my favorite summertime fruits and vegetables.
3. To help me lose weight, I need more motivation to keep going out and walking (and maybe C25K again?).
4. Enjoying BC while relaxing is the one thing I want to do this summer more than anything!
5. Just the other day I was saying how yummy raspberries were. And my friend has a raspberry farm!! Score!!!
6. Cause its all in my head. I think about it  over and over again.

7. And as for the weekend, tonight I’m looking forward to grocery shopping, tomorrow my plans include working for a few hours, and Sunday, I want to enjoy the sunshine!

Fast Food Fail: November 6-12

I’m reporting this in an attempt to lose weight.  I’m going to start with just updating on getting fast food (too often) or going to sit-down restaurants (more rare).  Eventually it might turn into posting all that I eat, or even how much I spend.m

  • Sunday: Ate at home!
  • Monday: Ate at home!
  • Tuesday: I didn’t work today because of the way the schedule worked. But I won tickets to the World Jr A Challenge for two games.  Since I was there for 6 hours I had dinner there. I ended up getting the buffet because it was better than a greasy burger and fries. But then I ate too much. Urgh.  Cardio class. I slept in again so I missed this class.
  • Wednesday: Ate at home!
  • Thursday: Ate at home!  Cardio class. Finally woke up on time to go!
  • Friday:  Ate at home!
  • Saturday:  Jamaican friend and I ordered some jerk wings. And I beat her! Maybe I’m Jamaican in a former life… but boy that was some spicy goodness.
Other than Tuesday where I ate too much, I ate at home most of the time.  Now I just need to get back to eating proper food and portions.  I’ve started by buying more fruit than I normally do.
